Here’s my answer to today’s challenge:

On warmer days, I like to fast-marinate a ball of buffalo mozzarella (the kind that come in water) in balsamic vinegar and some herbs, and serve with tangy rocket and some red onion. When the weather gets cooler, warm salads get my vote. Puy lentils warmed up and served with roast vegetables like carrot or peppers and a lower-cal dressing makes a quick & filling main course dish.
